Variances in Eggs

Different color eggs

The different color eggs all depend on the breed of chicken you get. They lay many different colors and sizes. As you might expect, smaller breeds lay smaller eggs. Brand new egg layers can also lay what are called "fairy eggs". These will increase in size as they age, so no worries if the first few eggs are snack sized!

Some breeds are known are known for bigger eggs such as Barred Rock, Rhode Island Red, Silver/Gold laced Wyandotte, Leghorn, Barnevelder and different Orpingtons.

Fresh eggs can last on the counter for 3 weeks, unwashed. This is done by the protective bloom that protects the egg. If you prefer to store in the refrigerator, the eggs can be stored for 3 months. Compared to the eggs you buy at the store, store eggs are normally a few months by the time you use them.
